Event Planning – 8 Mistakes That Could Sabotage Your Thanks Giving Turkey

  1. You put a cold turkey in the oven. Once your turkey has thawed, leave it on the counter for about an hour so that it warms up closer to room temperature before roasting. A thawed turkey is perfectly safe left on the countertop for an hour. 2. You don’t season all parts of the turkey. Make sure to season both outside and inside of the cavity. Doing so will season the meat from the inside out. 3. You’re not using a roasting rack. Using a roasting rack helps keep the bottom of your turkey from steaming and sticking to the bottom of the pan. You can also create your own DIY roasting rack by using a bed celery and carrots, or rolling aluminum foil into logs and placing the turkey on top. 4. You open the oven door too much. Rather than basting, which requires you to open your oven door every half hour, try brining or dry rubbing your turkey. Ranch Events Caters Comc Con's Annual "Pre" Party

The Food Was Delicious — Perfect Really!

  Ranch catered our wedding at Marina Village on 3/12/15. It was beautiful and everything went exactly as I hoped! The  food  was delicious — perfect really! The short ribs were to die for!  Rhonda was our contact there, she was so sweet and helpful and amazing! She helped us plan every detail and really made my dream come true. We were on a tight budget, Rhonda was open to negotiating the price and working with us on that. She also made sure we had the pretty chairs (makes a difference not having to use a separate rental company) and every detail the way we wanted. Even down to the way the napkins were folded! Staffs were very helpful too, setting up early in the day so we could put down our DIY centerpieces. Our event captain, he was very nice and gracious. It all came off without a hitch and Ranch was a big part of the reason why! I highly recommend them and working with Rhonda specifically. – Felicia P

Our Wedding Day Was Beyond Perfect!

  It is with GREAT pleasure that I recommend Ranch Events and give the highest praise to Bernardo, our wonderful event manager. We rented the Seaside Room in Marina Village for our  wedding  last week and hired Ranch Events for all of our catering needs, room set-up and food service. It was great to have all of those items taken care of by one vendor. It made our wedding planning a ton easier but what really made it a breeze was working with Bernardo! He was so accommodating and really went out of his way to make sure we had the most amazing day! Prior to our wedding, Bernardo met with us several times to do food tastings, table settings and walk-thrus at the venue. He and his staff were very generous and offered us wonderful hospitality. Bernardo worked diligently with us to discuss floor plans and decoration options. He was very responsive to my emails and phone calls and always had a positive answer or provided a comparable solution. There didn’t seem to be anything that he couldn’t

  The Service Charge covers all additional operational expenses, which includes: Administrative expenses, Use of kitchen utensils and equipment, Set up and cleanup of your event, minor losses and breakage of china or glassware. All hotel properties and caters applies this, which is common to be as high as 25%. Service charge Is Not A Gratuity. Most of our clients give the gratuity directly to the staff or specifies the amount with the Event Designer. Thank you for your business.

Thanks To Ranch Events, Hurricane Dolores Did Not Spoil My Wedding

Ranch events was absolutely wonderful. We worked with Rhonda who responded immediately to all of our questions, our concerns and all of our changes. We usually contacted her by phone and if there were any changes in pricing she would send a revised copy of our invoice within 24 hours so we were able to clearly document everything. The day before the wedding we realized that it would rain and we were able to add several canopies so that we could remain outdoors and the food and the guests would not get soaking wet. They even made sure that my DJ & his equipment would fit under the canopy. The entire day it rained (thanks hurricane Dolores), this was very unexpected for a San Diego wedding but Ranch helped to make our day beautiful and as dry as possible. The food tasted so so good, my husband and I didn’t get to eat too much during the reception, but Ramon who works at Ranch tracked down some to go boxes and packed us a nice large take out meal! "Wow" Beyond Expectation!

      We just wanted to tell you about our experience on Friday April 24. First, the staff that was at our event was fantastic. When we set up the room at the VFW in the morning it was hard to imagine how it would all look once it was all set up with linens and food tables set up. When we walked in I was overwhelmed and so happy with how beautiful it was. The staff made everything so nice. I had left an example of how the center pieces should be placed and the staff did a fantastic job. I had made small buckets with candy for favors. I wanted one set at each of the guests’ seats. The staff had a better idea and placed them on a separate table displayed so beautifully. Jose asked if everything was set up to our standards. It was and even better. Your staff was attentive to us and all of our guests. The bartender was served food by your staff as well as the manager of the club. Wow beyond expectations. The bartender wanted to tip your staff for such wonderful service but they refused. Ou

  As an event planner for the last 10 years, I have worked with A LOT of different caterers. Ranch Catering has proven themselves to be extremely professional as well as economical, which is why I will continue to refer my clients to them at every opportunity. I just finished a fabulous wedding at the Coronado Community Center and didn’t want to wait another minute to write a well-deserved review. Our catering manager, Ramon, was wonderful, answering every question via phone and email promptly. And on the day of the event, we had an absolutely stellar staff that I will be sure to request for future events: Giovanni was my fabulous Banquet Captain who tended to our every need and request with a smile.   We used the Seaside room for our  wedding ceremony and reception  site in March 2015. We worked with Bernardo as our point of contact and I have the highest compliments for him and his staff.  From the first day we met with Bernardo, he took a genuine interest in what we wanted for the wedding and reception.  The fact he controlled the room setup, décor and catering was a tremendous advantage and made it easier for us to focus on other vendors. The reception went exactly as promised, the buffet lines went smoothly and there were no significant delays to get everyone served.  We received compliments on the food quality and it exceeded our expectations.  Choosing the cupcake option allowed us to choose a variety of flavors and guests were able to sample the multiple options.
